Along the Sonoma Coast, oyster farming is part of the landscape—cold, clean waters producing some of the best oysters in the world. This recipe nods to that tradition, pairing freshly shucked oysters with a bright, seasonal pomegranate mignonette and a hint of nutmeg for warmth. The burst of tart fruit and gentle spice meet the briny sweetness of the oysters in perfect balance. Served alongside Red Car Rosé—with its crisp acidity and notes of red berries and sea breeze—it’s a pairing that feels distinctly coastal and effortlessly festive for the holidays.

Total Time: 15 minutes

Ingredients
- 12 fresh oysters, shucked, on the half shell
- 2 tablespoons shallot, finely minced
- 1/4 cup pomegranate juice (fresh or 100% pure)
- 2 tablespoons red wine vinegar
- 2 tablespoons pomegranate seeds
- 1/2 teaspoon freshly ground black pepper
- 1/2 teaspoon freshly grated nutmeg
Instructions
1. Make the Mignonette:
- In a small bowl, combine the minced shallot, pomegranate juice, red wine vinegar, black pepper, and nutmeg. Stir well to blend the flavors.
2. Add the Seeds:
- Stir in the pomegranate seeds for a burst of color and texture.
3. Chill:
- Let the mignonette rest in the refrigerator for at least 10 minutes before serving. This allows the shallots to soften and the flavors to meld.
4. Serve the Oysters:
- Arrange the oysters on a bed of crushed ice or rock salt. Spoon about a teaspoon of the pomegranate mignonette over each oyster just before serving.
