Ingredients
- 5 oz Laura Chenel Fresh Goat Cheese Pillow (Original), softened
- 1/2 cup heavy whipping cream
- 3 tbsp honey (wildflower or orange blossom)
- 1 tsp pure vanilla extract
- Pinch of sea salt
- 1 cup mixed fresh berries (strawberries, blueberries, raspberries, or blackberries)
- 4 graham crackers, coarsely crushed
- Optional garnish: fresh mint leaves or extra drizzle of honey
Instructions
1.Whip the cream:
In a chilled bowl, whip the heavy cream with an electric mixer until soft peaks form. Set aside
2. Make the mousse base:
In another bowl, combine goat cheese, honey, vanilla, and a pinch of salt. Beat until smooth and fluffy.
3. Fold together:
Gently fold the whipped cream into the goat cheese mixture until fully incorporated and airy.
4. Assemble:
Spoon mousse into serving glasses or small bowls. Top with fresh berries and sprinkle with crushed graham crackers.
5. Chill & Serve:
Refrigerate for at least 1 hour before serving. Garnish with mint leaves or an extra drizzle of honey just before enjoying.
