Ingredients


  • 2 small naan or flatbreads (or 1 large, cut in halves/quarters)
  • 2 cups pumpkin, peeled and cut into ½-inch cubes
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • Salt & black pepper, to taste
  • 1/2 cup crumbled feta cheese
  • 1 small red onion, thinly sliced
  • 1 tbsp honey (or pomegranate molasses for a tangy twist)
  • 1/4 cup pomegranate seeds (optional, for garnish)
  • 2 tbsp fresh parsley or mint, chopped

Instructions



1. Roast the pumpkin:

Preheat oven to 400°F (200°C). Toss pumpkin cubes with olive oil, paprika, cumin, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes, stirring once, until tender and caramelized.



2. Prepare the flatbreads:

Place naan/flatbreads on a baking sheet. Brush lightly with olive oil. Scatter roasted pumpkin, crumbled feta, and red onion over the top.



3. Bake:

Return flatbreads to the oven for 8–10 minutes, until feta is lightly golden and flatbreads are crisp.



4. Finish & garnish:

Drizzle with honey (or pomegranate molasses), then sprinkle with fresh herbs and pomegranate seeds. Slice into wedges.
